After leaving the Shaanxi History Museum at 3 PM, I asked the locals where to find good mutton stew (I had previously eaten an overpriced and terrible one near the Beilin Museum). Since I was returning to Taiwan the next day, I wanted to preserve the good taste, and they recommended walking two kilometers to Lao Lanzhou to eat it – they said it was definitely the right choice. After much deliberation, I ordered a bowl of mutton stew and a plate of bean sprouts and vermicelli. The portions were huge, so I only tore off a piece of stew and took a small plate of bean sprouts and vermicelli. The rest I gave to the locals at the next table to take home (everyone here orders a lot; it's so delicious that no one shares their food). The people at the next table taught me that there's an art to eating mutton stew: a huge soup bowl with two hard pieces of bread. First, you wash your hands thoroughly, then patiently break the bread into pieces the size of soybeans before handing it to the chef to add to the soup. The mutton soup in this delicious paomo (pita bread soaked in mutton soup) was excellent, with pure broth and tender meat. You shouldn't stir the soup too much, otherwise the aroma will be ruined. Instead, use your chopsticks to slide the hot mutton soup, paomo, and vermicelli into your mouth in a clockwise direction along the edge of the bowl. A side dish of pickled garlic is also provided to cut through the greasiness; eating garlic while eating paomo allows you to truly appreciate the flavor. The bean sprout and vermicelli plate even has the chef's number on the side—a unique and responsible touch. This was the most memorable taste I had during my eight-day trip to Xi'an.

A Muslim "halal" restaurant I presume. Try the Pao Mo, it is really quite nice! You will have to break the bread into pea size first then ask the waitress to serve it in soup.
